Mozzarella Pasta with Chicken

I enjoy having carbs after Saturday runs, but I also want to make sure to include protein. This is absolutely my favorite dish as it is tasty, colorful, and quick to make.
- Water is placed in a pot with oil and salt and brought to a boil. Cook the pasta according to the instructions.
- Preheat the oven to 180 °C. Chop the peppers into pieces and place in an ovenproof dish along with the tomatoes, drizzle with oil, salt, and pepper, and bake for 12 minutes. Make sure this is ready at the same time as the pasta.
- Place the pasta in a bowl and mix with the pasta sauce. Shred the chicken and place on top. Mix in the tomatoes and peppers. Add the mozzarella and then the pine nuts. Grate Parmesan over and add fresh basil.
