An extremely quick side dish that goes well with most types of food. I served this with some salmon but it can also go well with meat and all sorts of vegan dishes.
Chop all the ingredients into rough pieces and mix together in a bowl. A good addition to this would be some fresh cilantro, lime, pomegranate and even some pistachios. I'll be trying that next time.
