I've just started experimenting with quinoa and this is a brilliant simple sweet. You can also make a simple version which is just chocolate and quinoa for those who don't eat nuts and/or coconut flakes. Made this for the sewing club.
1. Heat the quinoa in a pan over medium heat until it starts to become slightly brown and begins to pop a little.
2. Melt the chocolate in the microwave meanwhile (of course, you can do it in a pot over a water bath, I just can't be bothered). I set it for 1 minute, stir a little, then for 30 seconds and if it needs more, another 30 seconds. Then I stir in the coconut oil if it is soft, otherwise I melt it in the microwave too.
3. Cut the cranberries in half and chop the cashew nuts.
4. Stir the chocolate together with the quinoa in the pan and then add the cranberries, cashew nuts, and coconut flakes.
5. Place in small muffin forms, just the right size.
6. Chill for at least an hour, they taste much better when they are cold.
