I love quick meals, and this one truly lives up to its name. Very flavorful and the chopped apples, cranberries, and pistachios completely top it off. However, it's optional, so the Macros don't include them.
The oven is preheated to 180°C. All the vegetables are placed in an oven-safe dish and topped with oil, salt, and pepper. Bake for 20 minutes. Meanwhile, the cod is cut into smaller pieces (fine to have them in 4) and seasoned with salt, pepper, and fish seasoning. After 20 minutes, the dish is taken out, the cod is placed over the vegetables, and it is baked for an additional 20 minutes.
I think it's amazing to serve this on a bed of spinach and to chop some apples into small pieces, some cranberries, and pistachios, and place them over the fish. It makes it incredibly juicy that way. Feel free to take a portion of the vegetables and place it over the cod when serving.
